Aged Yunnan White Tea

This sun-dried white tea from Yunnan offers a remarkably brothy texture and a profound umami foundation. It delivers a sweet clarity typical of fine Yunnan white teas, accompanied by an intense and sa. It leans umami, sweet and brothy.

Water around 75–85 °C (167–185 °F). In a mug, steep 3–5 min. For gongfu, use 4–5 g per 100 ml, 20–40 s steeps. You'll get to see how the flavor changes across multiple rounds. Pretty forgiving. Oversteeping by a bit won't ruin it the way it would with a green.

Grown in Yunnan, China from the Da Ye Zhong cultivar. This batch is from the 2021 harvest.
