Spring Gong Mei

This aged Gong Mei offers an incredibly smooth and sweet liquor with prominent notes of malt and sugarcane. Undertones of vegetal umami blend with a pleasant hay-like aroma, culminating in a thick mou. It leans sweet, smooth and malty.

Water around 75–85 °C (167–185 °F). In a mug, steep 3–5 min. For gongfu, use 4–5 g per 100 ml, 20–40 s steeps. You'll get to see how the flavor changes across multiple rounds. Pretty forgiving. Oversteeping by a bit won't ruin it the way it would with a green.

Grown in Fujian, China from the Fuding Da Hao cultivar. This batch is from the Spring 2015 harvest.
