Spring Aged Fuding Shoumei

This aged Shou Mei delights with an ultra-smooth and sweet character. Expect rich notes of malt and sugarcane, complemented by a subtle, vegetal umami undertone, making for a comforting and deeply sat. It leans sweet, malty and umami.

Water around 75–85 °C (167–185 °F). In a mug, steep 3–5 min. For gongfu, use 4–5 g per 100 ml, 20–40 s steeps. You'll get to see how the flavor changes across multiple rounds. Pretty forgiving. Oversteeping by a bit won't ruin it the way it would with a green.

Grown in Fujian, China from the Fuding Da Hao cultivar. This batch is from the Spring 2016 harvest.
