Shou Mei

This aged Fuding Shou Mei cake offers a comforting journey with prominent notes of dried dates and dark honey. A subtle herbal depth underpins a lingering sweet finish, developing a smooth and complex. It leans herbal, fruity and mellow.

Water around 75–85 °C (167–185 °F). In a mug, steep 3–5 min. For gongfu, use 4–5 g per 100 ml, 20–40 s steeps. You'll get to see how the flavor changes across multiple rounds. Pretty forgiving. Oversteeping by a bit won't ruin it the way it would with a green.

Grown in Fujian, China. This batch is from the 2017 harvest.
